Crock pot chicken and veggies

Some days, as much I'd love to spend a few hours in the kitchen making something complex, I just don't have the time. And what's better when you're short on time than making something in the crock pot? This colorful meal was so easy and loaded with flavor.


Crock Pot Chicken and Veggies

4 chicken breasts
1 1/2 TBSP Italian Seasoning
3 celery ribs
About 2 dozen baby carrots 
1 red pepper
1 orange pepper
1 yellow pepper
1/2 onion
Olive oil
2 cups spaghetti sauce

Cut all veggies into large chunks and lay in bottom of crock pot and cover with half the sauce. Place chicken on top of vegetables. Brush olive oil onto the top of each breast and sprinkle with seasoning. Add more sauce on top of chicken. Cook on high for 3 hours or low for 5 hours.
